Ghee Chicken Rice
A comforting and flavorful one-pot chicken and rice dish cooked in aromatic ghee, inspired by simple, home-style cooking.

Ingredients
- 1 lb Chicken Thigh
- 1 cup White Rice
- 2 Onion
- ½ tbsp Ginger (paste)
- ½ tbsp Garlic (paste)
- 2 tbsp Ghee
- ¼ cup Cashews
- 1½ tsp Garam Masala (biryani masala or garam masala)
- 1 Table Salt (to taste)
- 1½ cups Water (hot)
- 1 Yogurt
- 1 Black Pepper (to taste)

Wash the rice until the water runs clear, then soak for 30 minutes.

Heat ghee in a pan and roast the cashews until golden; remove quickly to prevent burning.

In the same ghee, add thinly sliced onions and sauté until nicely caramelized.

Add the chicken, ginger paste, and garlic paste; mix well. Add a splash of hot water, cover, and cook until the chicken is halfway cooked.

Add salt and the biryani or garam masala, and mix together.

Stir in the soaked and drained rice, then pour in enough hot water so it sits about 1 inch above the rice. Top with the roasted cashews.

Cover the pan and cook on a low flame until the rice is fully cooked.

Let the rice rest for a few minutes, then fluff gently with a fork or spoon.

For the raita: combine thinly sliced onion, yogurt, salt, and pepper.
